Date & Nut Squares

Ingredients:

100 ml	Strong Rooibos
340 g	Wholewheat flour (650ml)
300 ml	Brown sugar (375ml)
2 ml	Salt
15 ml	Baking powder
80 g	Chopped nuts (200ml)
330 g	Chopped dates (220ml)
2	Eggs
100 ml	Cooking oil
5 ml	Vanilla essence

Steps :

Preheat oven to 200°C (400°F)

Mix dry ingredients and sugar.

Add chopped nuts and dates.

Beat eggs, cooking oil, Rooibos and vanilla essence together. Add to dry ingredients and mix well.

5 Turn mixture into greased square baking tin (200 x 200mm).

6 Bake in centre of oven for 30 minutes.

7 Cool and cut into squares.

Spicy Tea Cake

Ingredients:

125 ml Strong Rooibos

280 g Cake flour (500ml)

20 ml Baking powder

2 mL Salt

1 ml Ground nutmeg

60 g Sugar (75ml)

125 ml Milk

45 g Butter or margarine, melted (50ml)

TOPPING

40 g Brown sugar (50ml)

20 g Coconut (50ml)

20 g Cake flour or oats (37,5ml)

5 ml Ground nutmeg

45 g Salt

1 ml Butter or margarine, melted (50ml)

Steps:

Preheat oven to 200°C (400°F)

Sift all dry ingredients together.

Add Rooibos, milk and butter or margarine and mix well.

Turn into greased cake tin (220 mm in diameter)

TOPPING

1 Combine ingredients and sprinkle over cake.

2 Bake in centre of oven for 30 minutes and serve hot.
