		NECTAR OF NATURE

		Rooibos is grown exclusively in Cedarberg of South Africa Preview.

	Baked Apples
	Crêpes Suzette
	Main Recipes

Baked Apples

Ingredients:

250 ml	Rooibos
6	Large, sour apples
200 g	White or brown sugar (250ml)
3 ml	Ground cinnamon
2 ml	Ground cloves
	Pinch salt
25 g	Butter or margarine (25ml)

Steps :

Preheat oven to 180°C (350°F).

Rinse and core apples.

Arrange apples in ovenproof dish. Mix sugar, spices and salt.

Stuff apples with mixture and heap slightly.

5 Dot with butter or margarine. Pour Rooibos into the dish.

6 Bake for approximately 20 minutes until apples are tender.

7 Baste occasionally.

8 Serve hot or cold with custard or cream.

(Serves 6)

Crêpes Suzette

Ingredients:

140 g Cake flour, (250ml)

375 ml Castor sugar

1 ml Salt

2 Eggs

250 ml Milk

15 ml Brandy

ROOIBOS SAUCE

75 ml Strong Rooibos

100 g Sugar (125ml)

50 ml Brandy

Juice and grated rind of 1 lemon

Juice and grated rind of 1 orange

Steps:

Sift dry ingredients together.

Beat eggs, add milk and stir into dry ingredients. Add brandy.

Leave for approximately 30 minutes.

Cook pancakes in a small pan and serve hot with Rooibos sauce.

SAUCE:

1 Combine all ingredients, stir until sugar has dissolved and leave for at least 30 minutes.

2 Serve with hot pancakes.
